Interactive wand toys with feathers or crinkly attachments work great - they get the hunting instinct out without scattering stuffing everywhere. A treat-dispensing puzzle ball is another solid choice, since it keeps them occupied on the floor without knocking things over.

Old-fashioned crumpled paper balls are a godsend for my Sphynx. Just take a plain piece of paper, scrunch it up, and toss it across the floor. They'll chase it, bat it around, and pounce on it, but it never leaves any stuffing or little plastic bits to clean up. That's the kind of simple fun that works.
