Following you around is probably just their way of saying you're the best part of their evening routine - they want your company when things get quiet. But honestly, I'm not convinced it's all about affection; maybe they just know that's when you're most likely to sit down and give them snacks or attention.

That evening shadow act is probably just their built-in clock telling them it's prime snuggle time - they know the day's winding down and you're about to settle in. I've had cats do this for years, and it always reminds me of how my old tabby would trail me to the bathroom just to supervise my toothbrushing like it was a major life event.
